Struggle is part of the journey...

I have been struggling lately... Really just battling with myself which is usual for me, but I have been losing lately. Being sick for most of last week really didn't help me either, I actually binged a few times which I hadn't done in awhile. My weight loss has been stagnant for months. I haven't gained an extreme amount and I haven't lost an extreme amount. I have hovered right around 400 lbs, I so want to break through that wall..... AGAIN. Its just seems like when I am killing my workouts I cheat with my eating and when I am doing great with my food I slack on workouts. To be honest I need to find balance with both, I think when I over do one I get burnt out and slack on the other. I definitely understand I need to maintain both to reach my goals.

I am not really frustrated just kind of disappointed with myself. I wasted so much of my life and when I see myself wasting more time I get upset with myself. Life is such I guess, just gotta roll with the punches and keep coming back for more. Giving up is not an option for me, my only option is to keep trying, and that's what I'll do.

Today was a good day. My eating was good, I didn't work out since I am still getting over my cold but I did do some things around the house. I had plenty of time to reflect and refocus my energy on whats important.

I am taking it one day at a time.

Trader Joe's Tamale Bake!

So a coworker of mine told me about a book called "The Cooking with Trader Joe's Cookbook - Dinners Done". Its basically a cookbook that has easy to follow recipes of dishes with ingredients that you can find at Trader Joe's. Being that I am a Trader Joe's LOVER I ordered the book right away. For the past week I have been thumbing threw the book and I have fallen in love with it. The recipes are simple and easy to follow, most don't have too many ingredients and what I love most of all is that the book lists the nutritional information for EVERY recipe.

Tonight I decided that the first dinner recipe I wanted to try was the Tamale Bake. The ingredients needed for the recipe are as follows:

  • 2 (18-oz) tubes of pre-cooked polenta
  • 2 Tbsp olive oil
  • 1 large onion - chopped
  • 3 zucchini squash - sliced
  • 1 (12-oz) package of Soy Chorizo (Excellent stuff by the way!)
  • 2 (15-oz) cans of black beans - drained
  • 1/2 enchilada sauce
  • 1 cup shredded cheese
  • 1/4 cilantro
  • sour cream - garnish

The directions were as follows:

1. Preheat oven to 350 F
2. Heat olive oil in a skillet. Saute onion and zucchini until soft, about 5 minutes. Add chorizo and stir. Remove from heat.

3. Lightly oil a 9x13-inch baking pan. Place half of the polenta on the bottom. Sprinkle half each of the chorizo mixture, black beans, enchilada sauce, and shredded cheese. Repeat with the second layer.

4. Cover and bake for 30 minutes until cheese is melted and casserole is piping hot. 

Thats pretty much it! Its was so easy to make and it tasted great. The book lists the prep time as 20 minutes and the cooking time as 30 minutes. If you follow the recipe as listed it makes 10 serving and the nutritional information per serving is as follow:
  • 294 calories
  • 12g fat
  • 4g saturated fat
  • 15g protein
  • 35g carbs
  • 10g fiber

Strong for 23 IN 2011 is OVER!

Strong for 23 in 2011

Well January is over people!!

Back in the beginning of January my dear friend Pam and I came up with the idea of committing to 23 days of working out during the first month of 2011. We had both been in a slump and needed a challenge to jump start the new year with.

The rules were simple:

1. Workout for at least 23 days of the 31 days in January.

How did everyone do?? I worked out 21 of the 31 days in January, definitely proud of that!

So I didn't reach the 23 days? WHO CARES! I never have winners and losers in any of my challenges, if you step up and at least accept the challenge then you have already won in my book. I hope it was a great month for everyone, lets push it harder in the month of February!
